Mac and Cheese Beef Meatloaf Casserole

Ingredients:

For the meatloaf layer:

1 cup ketchup

1 cup barbecue sauce

2 lbs lean ground beef

30 Ritz crackers, crushed

2 oz onion soup mix

2 large eggs

For the macaroni and cheese layer:

3 cups elbow macaroni

2 cups milk

10.5 oz condensed cheddar cheese soup

1 teaspoon salt

1 teaspoon pepper

1 tablespoon garlic powder

1 tablespoon onion powder

4 cups shredded mozzarella and cheddar cheese blend

Directions:

Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.

Prepare Sauce: In a medium mixing bowl, combine the ketchup and barbecue sauce. Stir until well blended. Set aside.

Make Meatloaf Mixture: In a large mixing bowl, combine the ground beef, crushed Ritz crackers, onion soup mix, eggs, and ½ cup of the ketchup-barbecue sauce mixture. Mix thoroughly until all ingredients are well incorporated.

Form Meatloaf Base: Press the meat mixture evenly into the prepared baking dish. Spread the remaining ketchup-barbecue sauce mixture over the top of the meatloaf layer.

Bake Meatloaf: Place the dish in the preheated oven and bake for 30 minutes.

Cook Macaroni: While the meatloaf is baking, cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Prepare Cheese Sauce: In a large bowl, whisk together the milk and condensed cheddar cheese soup until smooth. Add the salt, pepper, garlic powder, and onion powder. Mix well.

Combine Macaroni and Cheese Sauce: Add the cooked macaroni to the cheese sauce mixture. Stir in 2 cups of the shredded cheese blend, mixing until the macaroni is evenly coated.

Assemble Casserole: After the meatloaf has baked for 30 minutes, remove it from the oven. Spread the macaroni and cheese mixture evenly over the meatloaf layer. Sprinkle the remaining 2 cups of shredded cheese blend on top.

Final Bake: Return the dish to the oven and bake for an additional 17–20 minutes, or until the cheese is melted and bubbly, and the top is just beginning to brown.

Rest and Serve: Remove the casserole from the oven and let it rest for a few minutes before slicing and serving.
