Ingredients:
1 cup old-fashioned rolled oats
1 ½ cups unsweetened almond milk (or milk of choice)
2 large eggs
½ cup honey or maple syrup
¼ cup coconut oil or olive oil, melted
1 teaspoon vanilla extract
1 cup whole wheat flour (or all-purpose flour)
1 teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon salt
½ cup unsweetened applesauce
½ cup chopped walnuts or raisins (optional)
Directions:
Preheat the oven: Set to 350°F (175°C). Lightly grease or line an 8x8-inch baking pan with parchment paper.
Soak the oats: In a bowl, combine the oats and almond milk. Let them soak for 10–15 minutes to soften.
Mix wet ingredients: In a large mixing bowl, whisk together the eggs, honey (or maple syrup), melted oil, vanilla extract, and applesauce.
Combine dry ingredients: In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
Assemble the batter: Add the soaked oats and wet mixture to the dry ingredients. Mix just until combined. Fold in walnuts or raisins if using.
Pour and bake: Pour the batter into the prepared pan. Smooth the top with a spatula. Bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
Cool and serve: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve plain or with a dollop of yogurt or fruit spread.
