Easy Chicken Stroganoff
Ingredients:
- 1 lb (450g) boneless, skinless chicken breast or thighs, cut into strips or cubes
- 1 tbsp olive oil or butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup mushrooms, sliced (optional)
- 1 tsp paprika (optional)
- Salt and pepper, to taste
- 1 cup chicken broth
- 1 cup sour cream
- 1 tbsp flour (optional, for thickening)
- Cooked egg noodles, rice, or mashed potatoes (for serving)
- Fresh parsley (optional garnish)
Instructions:
- Cook chicken:
Heat oil or butter in a large skillet over medium-high heat. Add the chicken and season with salt, pepper, and paprika. Cook until browned and cooked through (about 5–7 minutes). Remove from skillet and set aside. - Sauté veggies:
In the same skillet, add a little more oil if needed. Sauté onions and mushrooms until soft, about 5 minutes. Add garlic and cook 1 minute more. - Make sauce:
Return chicken to the pan. Stir in chicken broth and bring to a simmer. If you want a thicker sauce, mix the flour with 2 tablespoons of water and stir it in now. - Add sour cream:
Reduce heat to low. Stir in sour cream and mix until smooth and heated through (do not boil). Adjust seasoning to taste. - Serve:
