Cheesy Hamburger Potato Soup

Ingredients:

  • 1 lb ground beef (hamburger)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and diced (Yukon Gold or Russet)
  • 3 cups chicken or beef broth
  • 1 1/2 cups milk (or half-and-half for creamier texture)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded carrots (optional)
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 3 tbsp butter
  • Salt & pepper to taste
  • Optional garnish: extra cheese, bacon bits, green onions

Instructions:

  1. Brown the Beef:
    In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess grease. Add diced onion and cook until translucent (about 3 minutes). Add garlic and cook 1 minute more.
  2. Add Potatoes & Broth:
    Stir in the diced potatoes and broth. Bring to a boil, then reduce heat, cover, and simmer for 10–15 minutes, or until potatoes are tender.
  3. Make a Cheese Base:
    In a separate pan, melt butter. Whisk in flour and cook for 1–2 minutes to form a roux. Slowly whisk in milk, stirring constantly until thickened. Remove from heat and stir in shredded cheddar cheese until melted.
  4. Combine & Finish:
    Add cheese mixture to the soup pot. Stir well. Add carrots (if using), and cook another 5 minutes. Stir in sour cream, salt, and pepper to taste.
  5. Serve:
    Ladle into bowls and top with extra cheese, bacon bits, or green onions if desired.
