Salmon with Mango Salsa

Ingredients:

For the Salmon:

  • 4 salmon fillets (6 oz each, skinless or skin-on)

  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste
  • Juice of 1 lime

For the Mango Salsa:

  • 1 ripe mango, peeled and diced
  • 1/2 red bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/2 jalapeño, seeded and finely chopped (optional)
  • Juice of 1 lime
  • 2 tbsp fresh cilantro, chopped
  • Salt to taste

Instructions:

  1. Make the Mango Salsa:
    In a medium bowl, combine diced mango, bell pepper, red onion, jalapeño (if using), lime juice, cilantro, and a pinch of salt. Toss gently and refrigerate while you cook the salmon.
